Nuts…an ancient profession in Damascus’s Old City of more than seventy years

Damascus, SANA- When you walk through Medhat Pasha Market in the old city of Damascus, you smell aroma of roasted seeds that come out of shops specialized in making them.

The 70-year-old craftsman Issam Nizam, known as Abu Safwan, has been practicing this profession for almost 45 years, told SANA reporter that this profession is one of the ancient professions inherited from the Syrians and continues to this day.

“My brothers and I inherited this profession from our father who on his part inherited it from our grandfather who created this manual roasting machine in 1950,” said Abu Safwan.

He noted that all types of seeds and nuts, including walnuts, peanuts, corn, chickpeas, pistachios, sunflower and pumpkin seeds, among others, are processed using dyes, special flavors, hot peppers, thyme, cheese, ketchup and other flavors with some spices during the roasting process.
